Job Description: The incumbent in this position directs and supervises the overall Food Service operation in a major correctional institution and satellite facilities. Duties may include but will not be limited to the following: Job Responsibilities: As supervisor, this position communicates with, motivates, provides or coordinates training, evaluates employee’s work, plans and directs the employees’ work, and has the authority to hire or recommend the hire, transfer or discipline of subordinate employee. Responsible for meal planning based on participation, documentation of meal participation, and proper food preparation and recording of therapeutic diets for the inmate population and, if applicable, county jail inmates. Ensures meals are prepared in accordance with the Department’s master menu manual and within the Department’s established per diem. Responsible for ensuring proper sanitation in accordance with 64E-11, FAC and department rules. Responsible for accurate weekly food inventories and food supply orders including small ware orders and cleaning supplies. Responsible for maintaining NCNP documentation in accordance with DOE and DC rules. Supervises all Food Service employees and delegates authority properly so that subordinates may accomplish their duties in Supervisor’s absence. Relieves subordinates when necessary. Completes evaluations in a timely manner. Responsible for the supervision/scheduling/training of inmates assigned to food service and gain time reports as well as the supervision of the food service staff. Responsible for answering inmate requests and informal grievances pertaining to food service. Responsible for providing appropriate documentation for ACA files. Responsible for providing Corrective Action Plans for inspections as applicable. Responsible for submitting work orders as necessary to ensure all equipment is in proper working order. Knowledge of food service safety and sanitation procedures. Ability to plan and direct a food service program including the purchasing, storage, preparation and serving of food at an institution. Ability to plan nutritional meals for groups of people. Ability to utilize problem-solving techniques. Ability to develop various reports. Ability to assess budgetary needs. Ability to formulate policies and procedures. Ability to prioritize work load. Ability to determine work priorities, assign work, and ensure proper completion of work assignments. Ability to establish and maintain effective working relationships with others.
